Tomato Basil Frittata

INGREDIENTS

  • ½ cup diced yellow onions

  • 6 eggs

  • ½ cup skim milk

  • 1/4 teaspoon garlic powder

  • pinch of salt

  • 1/4 teaspoon pepper

  • 2 tsp extra virgin olive oil

  • 1 cup part skim mozzarella cheese

  • 2 cups cherry tomatoes, halved

  • ½ cup basil leaves, chopped

DIRECTIONS

  1. Preheat oven 350° F

  2. Whisk eggs, milk, garlic powder, salt and pepper in a medium bowl until well combined.

  3. Heat olive oil over medium heat in a cast iron skillet (or any oven safe skillet).

  4. Sauté onions until translucent, about 5 minutes.

  5. Add tomatoes and sauté until tender, about 2 minutes.

  6. Pour egg mixture over tomato and onion. Cook until edges set, about 4 minutes.

  7. Sprinkle cheese over egg mixture.

  8. Place skillet in oven and bake for 20 minutes. Add basil to skillet halfway through.

  9. Remove from oven and let sit for 5 minutes.

  10. Serve immediately. Store leftovers in refrigerator for up to one week, or freeze for three months.
