Tomato Basil Frittata
INGREDIENTS
½ cup diced yellow onions
6 eggs
½ cup skim milk
1/4 teaspoon garlic powder
pinch of salt
1/4 teaspoon pepper
2 tsp extra virgin olive oil
1 cup part skim mozzarella cheese
2 cups cherry tomatoes, halved
½ cup basil leaves, chopped
DIRECTIONS
Preheat oven 350° F
Whisk eggs, milk, garlic powder, salt and pepper in a medium bowl until well combined.
Heat olive oil over medium heat in a cast iron skillet (or any oven safe skillet).
Sauté onions until translucent, about 5 minutes.
Add tomatoes and sauté until tender, about 2 minutes.
Pour egg mixture over tomato and onion. Cook until edges set, about 4 minutes.
Sprinkle cheese over egg mixture.
Place skillet in oven and bake for 20 minutes. Add basil to skillet halfway through.
Remove from oven and let sit for 5 minutes.
Serve immediately. Store leftovers in refrigerator for up to one week, or freeze for three months.
